    DESCRIPTION:

    Medium strength Type 1 flour is obtained from a blend of soft wheat that balances a high protein content and excellent extensibility. It is suitable for direct and indirect doughs and with mother yeast, with hydrations between 65% and 75% and maturation up to 18/24 hours at a controlled temperature.
    It is ideal for all types of small and large sized bread, from ciabatta to rustic bread.

    Even in the milling we do not take shortcuts. No artificial millstone but natural lava stone extracted from the Etna quarries. What's the benefit? A very slow rotation, which respects our grain and transforms it into a flour that really smells like wheat!
