    Fontina PDO of alpine pasture is a Cheese with a Denomination of Origin Protected by the

    scent of milk, sweet taste and soft and dark paste in the mouth. In particular, its type "d'Alpeggio" (alpine pasture) can really be defined as "daughter of the mountain" with everything you carry behind it: pastures, noble milk, traditional dairy practices, values that go beyond the product itself It is the cheese symbol of the Aosta Valley and is produced with raw and whole milk. It has a compact, thin and brownish crust, inside which is enclosed a semi-cooked, elastic and dark paste, with small and poor eyes. The color is light straw in the forms produced in winter, when cows are fed hay, and tends to the most intense yellow in summer production. The taste is sweet and the fragrant aroma is accentuated with the seasoning.

    Pairings: Fontina can be consumed alone and accompanied with acacia honey and dried fruit but it is ideal with polenta instead if you really want to touch the sky we recommend it in combination with white truffle in general however fontina has an extreme ease of fusion from which, by the way, it owes its name. Fontina, in fact, melts very well from 60°C t the most well-known dishes also remember the " gnocchi alla bava ".

    Wines: We suggest red wines, with a delicate and light scent that enhance the flavors of the land where milk was produced, as well as a white wine, always soft and not too heavy that makes the aromas and nuances of flavor stand out. One of them could be a Vernaccia of San Gimignano.
