A history that dates back to 5000 years ago, even if scientists and archaeologists are not at all able to fix the moment when natural yeast was discovered.
Certainly the discovery was completely accidental: a mixture of flour and water, forgotten for some time in a hot and dark corner, fermented, swelling and acquiring an acid taste. Despite these visible transformations, it was still baked and what resulted was a softer, lighter and more palatable bread.
