Tarallo or Tarallino is one of the oldest products of the Apulian tradition. Its origins are uncertain but it is thought that it is most likely from 1400, considered at the time a poor and simple product, prepared in the farmers' houses and offered to guests together with a glass of wine. It is a ring of unleavened dough cooked in the oven. Today it is used a lot during aperitifs, as snacks.
