    The product is sold with a tolerance of +/- 10% as it is cut on the moment from the whole shape to ensure the greatest possible freshness.



    La toma di Lanzo is a historical cheese in the Piedmontese tradition, already mentioned in documents of the 1400s. It is a whole and raw cow's milk cheese, with pressed pasta. The curd is still laid in molds with traditional hemp canvases.

    The crust is smooth, straw/greyish in color, the typical depression may be present on a plate due to the traditional forming technique that uses only the natural fiber cloth, without mold.

    The paste of straw yellow color, has small and diffuse eyelet and consistency between soft and semi-hard, with a characteristic, harmonious and delicate aroma, linked to the seasonal varieties of the flora, being more intense and fragrant with the seasoning.

    Pairings: This toma is really a great table cheese, accompanied by nuts or hazelnuts. It is also used combined with polenta, or reduced to "fondue", or melted on meat. With its delicate flavor it can be used for the preparation of first courses, to keep risotto giving a soft note, or as a filling for omelettes and quiches. It lends itself to being used in the preparation of fillings thanks to the ease with which it blends.

    Wines: It goes well with full-bodied reds such as Freisa D'Asti, Dolcetto, and Barbera we invite you to taste it also with a glass of Franciacorta: in our opinion the best way to enhance its taste that evokes on the palate the scents of herbs and hay of mountain areas.
