Toma Piemontese DOP (Denominazione d'Origine Protetta | PDO Protected Designation of Origin) is a semi-cooked semi-soft cheese with a long ripening time. Produced with cow's milk of at least two consecutive pasteurized milks, the taste is intense and harmonious.
The crust is thin in its fresh form but takes on consistency during ripening. It is grey-brown in color and is not edible.
Pasta is tender, white in color with straw shades with fine eyes distributed regularly.
The taste is intense and harmonious and is the result of a slow maturation in which the shapes are seasoned in underground cellars on white fir ladders for a period that can vary from a minimum of 45 to a maximum of 120 days.

Pairings: It is used in the kitchen for the preparation of typical Piedmontese dishes such as Fondue and Polenta and as table cheese.

Wines: Dolcetto d'Alba and Barbera d'Alba.

'' My grandparents Felice and Rosa passed down the art and passion of working milk to me. My cheeses speak of the Biella valleys, their history and culture, the harsh, sweet nature ... Wonderful. The historical memory of the dairy tradition of the Biella alpine valleys has been handed down through four generations. Over the course of more than 120 years, love for the land and passion for creating cheeses  has resulted in excellent production. The experience of tasting a traditional cheese thus acquires a cultural value. It is a journey into the civilization of the past that transmits important values and knowledge to us for the future."

Our cheeses are the expression of a controlled supply chain: from milk to seasoning and all the way to the consumer's table, we ensure that our products are of the highest quality.

From pastures to the table, all our shapes are followed step by step by the expert hands of those who make their work a passion. In our cheeses, two stories intertwine: that of the earth, of grass and flowers and that of humans with animals.

Every day, we collect fresh milk from small farms chosen for the traditionality of their work and their love and dedication for their animals. This precious raw material is transported to the dairy, where the cheese, produced by traditional methods, takes shape. The journey continues in the cool maturing cellars. Complete control over the supply chain thus allows us to guarantee the identity and quality of our products.
